It is only 4 ingredients, gluten free and DELICIOUS!!!
Really and truly the best peanut butter cookier I have ever had with or without gluten.
Peanut Butter Cookies
1 cup peanut butter - creamy or crunchy - I suggest Jif Creamy or Wegmans Organic Creamy - not the natural varities
1 cup sugar - with some additional for rolling
1 large egg
1 teaspoon baking soda
Preheat oven to 350ยบ
Grease baking sheets - although I used Chicago Metallic non stick cookie sheets without greasing and the cookies were fine.
In a bowl with an electric mixer, beat together peanut butter and sugar until combined well.
In a small bowl, lightly beat the egg and then beat into the peanut butter mixture.
Add baking soda and beat well.
Roll dough into balls about 1-2 inches across.
Roll balls in sugar and arrange about 1 inch apart on baking sheets.
With tines of a fork, flatten balls into 2 inch diameter. Pressing across one way and then the other on the cookies.
Bake cookies in middle of oven until puffed and golden brown - about 10 minutes.
Cool on baking sheets for 2 minutes and remove with a spatula.
Do NOT chill the dough. Cookies may be kept in an airtight container at room temperature for up to 5 days (I have gone longer without an issue). Makes about 30 cookies.

I so am making these next week. Never saw the need for baking soda in my pantry because I didn't cook. But now I do and can't wait to try them.
I've made these cookies several times already and OMG love this recipe. Half hour from pantry to eating a moist warm peanut butter cookie! Of course I use coconut sugar because I don't generally have white sugar in my house, but I'm weird like that. I will making more tonight to share with my mom who recently went gluten free and my brother who needs to do it.
